Fishing can supply a year-round source of food. Unfortunately, many of our waterways have become polluted with all kinds of toxins. Make sure you know what's in the water/fish before eating too much of it. Especially kids & pregnant women! .

Fishing with Poisons By Chuck Kritzon © 2003: In my studies of California Native Cultures, I was often surprised to keep coming upon plant-use references documenting "fish poisons". In widening my search, I became aware that most indigenous cultures across the Americas and indeed on all continents in the temperate areas of the world, used poisonous plants to catch fish.

Ajumawi Fish Traps by Dino Labiste: Stone fish traps were constructed by the native Pit River groups in northeastern California. These ingeniously simple and efficient fishing structures were used to harvest the Sacramento sucker (Catostomus occidentalis), a bottom dwelling, boney fish that reached a size of 18 inches and weighed five pounds or more...

Spears, Weirs and Traps by Norm Kidder: The type of gear used to create a fish dinner is totally determined by the type of fish, its habits, its size and the place you're catching it. Deepwater fishing is very different than shallow water. Size matters a lot. Spears function in at least three different ways -- stab 'em, grab 'em and pin 'em down. Harpoons stab into fish (or other creatures) and have barbs to keep them from pulling out. With a toggle harpoon, the end comes off and turns sideways inside the animal's body, and is attached to the fisherman by a strong cord. Harpoons are best suited for large animals, up to whales and fish, like salmon...

Antler Fishing Hook by Patrick McGlinchey: Fish is a fantastic source of protein and the seas and inland waters have always been harvested by mankind. When living in the wilds, we can avail ourselves of this resource by using the many fishing techniques that are available, eg netting, trapping, spearing and angling...

Cleaning

UNDERSTANDING FISH PRESERVATION AND PROCESSING By Richard T. Carruthers. Fish begins to spoil as soon as it is caught, perhaps even before it is taken out of the water. Therefore, the key to delivering a high quality product is close attention to small details throughout the entire process of preparation, catching, landing, handling, storage, and transport. Fish that becomes spoiled or putrid is obviously unusable. Fish that is poorly cared for may not be so obviously bad, but it loses value because of off-flavors, mushy texture, or bad color.

A Pocket Guide to Care & Handling of Fish from Stream to Table Proper handling of fish from the time you catch them until you get them to the table will help maintain optimum eating quality. Keep the following fish handling tips in mind.

How To Clean Fish A lot of people ask us about the best way to clean fish, and our normal response is to ask them what they intend to do with them. Depending on your intended recipe, there are three primary ways to clean a fish.

Baked fish recipes and cleaning fish - A how to article Most Baked fish recipes require the fish to be cooked whole with the skin and head on. This means the fish has to be thoroughly scaled if it is a scale fish and cleaned . Cleaning fish in the order described below will save time and vastly improve the resulting dish, a specialist fish cleaning knife is not necessary, any sharp knife will do.

Learn More about cleaning fish Unzipping is a term that was coined by the founder, Peter Stellas of No Bones About It, Inc. Peter had learned an unusual technique of filleting fish while working at fish markets in Chicago. Taught the basics by an Asian man from Hawaii, Peter took that knowledge and further developed the concept to make it easier to fillet fish from the belly.

Fish Drying Racks Drying is one of the simplest ways to preserve fish. To get the best results it must be done quickly and cleanly. Water occurs naturally in the fish's body. When a fish is dried, water that is close to the skin or cut surface is lost first. Water that is deep in the flesh takes longer to leave. Thick fish must be split in half so that they dry quickly. Fatty, salty or partly dried fish also take longer to dry. When fish is drying, air takes up the water. If the air is damp and moving weakly it cannot carry much water, so drying is slow. Fish dry more quickly in stronger currents of air. Good quality products can be produced when there is plenty of sunlight and dry, moving air.

About Fish

Good Whirling Disease Practices What is Whirling Disease? A microscopic parasite that causes the disease attacks the cartilage in the head and spine of your fingerling trout. Fully infected fish may display a whirling behavior...

Parasites in Fish All living organisms, including fish, can have parasites. Parasites are a natural occurrence, not contamination. They are as common in fish as insects are in fruits and vegetables. Parasites do not present a health concern in thoroughly cooked fish.

Natural Marine Toxins Paralytic shellfish poisoning (PSP) toxins and domoic acid are naturally occurring marine toxins. Single-celled marine plants (phytoplankton) produce these toxins. Marine animals that filter their food from seawater may accumulate these toxins. The toxins do not appear to directly harm the animals, but people or some predatory animals eating toxic seafoods may become poisoned. PSP toxins and domoic acid are powerful nerve poisons. PSP toxins and domoic acid have no taste or odor. There is no visible difference between toxic and safe seafoods. Cleaning seafoods in many cases will not remove the toxins. Cooking does not destroy the toxins.

Seafood that Glows in the Dark Seafood that produces a bright, blue-green light in the dark could be a meal from outer space or haute cuisine in a science fiction novel. The U. S. Food and Drug Administration (FDA) has received many consumer complaints about various seafood products "glowing" in the dark. Some of these consumers called their local health departments, poison control centers, and their U.S. Senator because they thought they had been poisoned by radiation. These consumers said they had trouble convincing people that their seafood was emitting light.

Regulatory Fish Encyclopedia (RFE) The Regulatory Fish Encyclopedia (RFE) is a compilation of data in several formats that assists with the accurate identification of fish species. The RFE includes for each of a number of commercially relevant fish species for sale in the U.S. market high-resolution photographs as their scanned digital images (jpeg format) of whole fish and their marketed product forms (including fillets, steaks, or whole crustaceans) which may be used for visual comparison to a whole fish in question (or its marketed product form). The RFE also includes unique taxonomic characteristics (physical properties such as size, shape, color, etc.), usually in a "checklist" format, to aid in identification. And more…
