Beans recipes The aim of this booklet is to provide guidelines to our field extension staff together with our housewives on the use of beans as they are a cheap source of proteins. Dry beans supply protein for body tissues, energy for daily living and some vitamin B. They also contain mineral iron. Once beans were extra-slow to prepare in home kitchens, but with the modern cooking methods beans take a short time to cook. Beans are cheap to buy or to grow at home compared to other sources of protein. In order to facilitate the cooking beans should be soaked and cooked in the same water to avoid loss of nutrients.

Outdoor Oven This primitive "kitchen range" is often used in survival skills training programs given to missionaries who intend to set up housekeeping among native tribes far from civilization. Therefore, the practical cooker/baker could serve nicely in any remote area where supplies are scarce and the most common building materials are stone, earth, wood, and salvageable scrap metal.

Maize Meal Recipes The aim of the booklet is to provide guidelines to our field extension staff together with housewives in use of Maize as it is a staple food. Maize meal is obtained from grinding maize grain. It is a source of energy and if not highly refined can "serve as a source of vitamin B, E, and mineral Iron. During milling the seed coat and Bran layers are removed sometimes even the germ, therefore the remaining will only provide starch to the body. Therefore the best maize meal is the one ground at home not machine milled. Maize meal can be used in various ways. It is used in preparation of porridge, Ugali and cakes. When prepared it should be served with other foods like meat and vegetable to provide the other nutrients.
